According to the solubility of vitamins, it is divided into fat-soluble vitamins and water-soluble vitamins.

Fat-soluble vitamins are easily soluble in fat and most organic solvents, but insoluble in water. The absorption process is more complicated and parallels with the absorption of fat. Therefore, any conditions that can make fat malabsorption (such as bile acid deficiency, pancreatic insufficiency, Obstructive jaundice, celiac diarrhea, localized enteritis) can all lead to a deficiency of one or all fat-soluble vitamins. Due to the extremely slow metabolism of fat-soluble vitamins, if the dose is exceeded, it can accumulate in the human body and produce toxic effects. Commonly used fat-soluble vitamins are vitamin A, vitamin D, vitamin E and vitamin K.

Water-soluble vitamins are easily soluble in water, and most of them are components of coenzymes. They can function through coenzymes to maintain normal metabolism and physiological functions of the human body. The human body does not store much water-soluble vitamins. When the tissue storage is saturated, the excess vitamins can be quickly excreted in the urine. Commonly used water-soluble vitamins include vitamin B1, vitamin B2, vitamin B6, vitamin B12, niacin, niacinamide, vitamin C, folic acid and pantothenic acid. If it is severely lacking, it will endanger health.
